  • 3 large quinces;

  • 1 stick of cinnamon;
  • 2 whole peels of orange peel, approximately 6-8 cm;
  • 0.75 L of brandy or fruit brandy to your taste;
  • 0.25 liters of water;
  • 450 g of sugar.

Fruits need to be washed and peeled and bruised. Cut into small slices and place in an oven preheated to 190 degrees on a baking sheet covered with parchment. Fruits are baked until soft - about 30-35 minutes. During cooking, it is necessary to turn or shake the slices 1-2 times for uniform baking.

While the fruits are suitable, you need to brew the syrup from sugar and water, just boil it for 1 minute.After that, the finished fruits are transferred to a suitable jar, spices and zest are added and poured with syrup. After the mixture has cooled, it is poured with cognac to cover the fruits, covered and left to insist for 2 weeks, shaking every 2-3 days.

The finished liquor must be filtered through a sieve or gauze, and then filtered. Store the drink in the refrigerator in clean bottles. And here is another nice easy recipe - a sparkling cocktail for the holiday:

  • 0.45 L of baked fruit liquor;
  • 0.15 L of lemon juice;
  • Brut (any dry sparkling wine).

The fruit base should be placed in a champagne glass and topped up with sparkling wine to the top. Gently stir and garnish the cocktail with a slice of lemon or a spiral of zest.

Quince must be washed and freed from the cores. Make sure that the volume of the product is not reduced significantly. By weight, the cores occupy about 1/10 of the fruit; prepare quinces with a margin if the fruits are small and the output volume of the products is greatly reduced. The peeled fruits are cut into thin slices and sent from a large vessel. Then quince is sprinkled with sugar, shake the contents well - and let the fruit let the juice go. After 6-10 hours, the syrup is poured with alcohol and water, mixed thoroughly to achieve uniformity, tightly closed and left to infuse in a dark place for about 1.5 months. Periodically, the drink should be shaken to insist evenly.

Ready alcohol must be filtered - and you can serve, just in time for the New Year's table.
