Confectionery Physalis Jam: Classic

  1. First, prepare a sweet base that will soak the berries. Combine water with granulated sugar, place on a stove and boil until smooth. When the syrup is ready, cool it.
  2. At this time, sort the physalis. Remove the boxes, wash the raw materials under the tap. Dry by laying on towels. Now boil plain running water, scald the fruits and refrigerate immediately.
  3. Chop into 2 parts, send to a container for cooking treats. Pour sugar base here, mix well. Wait 4-5 hours, this time is allotted for uniform impregnation of berries.
  4. When the named period comes to an end, put the composition on the burner. Stew on medium heat before drilling, then reduce power to a minimum. Cook the treat for 8 minutes.

  1. Select physalis, excluding all spoiled and badly wrinkled specimens. Clean healthy raw materials from boxes, tailings and extraneous debris. Rinse in a basin with warm water, pour cool boiling water, dry.
  2. Now in each berry, make 3 holes with a sewing needle or a toothpick. Take up the preparation of ginger: peel the root, wash, chop into thin slices.
  3. Transfer ginger to a pan, add water according to the recipe. Turn the burner on to the middle mark, wait for the first bubbles.Boil the mass for another 3 minutes, start pouring granulated sugar in portions.
  4. Stir the composition at the same time to completely dissolve the sweetener. When the syrup becomes homogeneous, add the whole physalis fruits to it. Remove from the burner, hold under cheesecloth for 2 hours.
  5. Due to the holes, the berry is impregnated with a sweet mass evenly. After the allotted interval, place the dishes with physalis on the stove, boil until a thick consistency is obtained.

  2. Rinse citrus under the tap, rub with a foam sponge to remove plaque. Scald lemon with boiling water, chop into slices and remove seeds.
  3. Send citrus to a pot of prescription drinking water, cook for 5 minutes. After this time, add portioned sugar, continue to simmer over low heat.
  4. When the syrup becomes homogeneous, cook for 8 minutes, turn off the burner. Add whole physalis to the sweet base, wait half an hour.
  5. Again, place the dishes on the stove, wait for the drilling to begin. Boil the food for a quarter of an hour, get rid of the foam and stir the contents of the pan.
  6. After the specified interval, remove the treat from the stove, cool for 10 hours. Conduct a second heat treatment in a third of an hour. This time is necessary for the physalis to acquire translucency.
  7. When the syrup becomes amber, remove the jam from the ring. Pour into sterile containers immediately, do not wait for cooling. Cork, cool under a sweatshirt, transfer to cold.

  • physalis - 1.7 kg.

  • plum (mature and dense) - 800 gr.

  1. Clean the physalis, wash the berry, dip in cool boiling water for half a minute. Then grind the raw material into halves or pieces of arbitrary shape.
  2. Rinse the plum by removing the white coating. Get rid of the seeds, cut into slices. Now prepare the base (syrup): combine granulated sugar with water, heat until smooth.
  3. When the crystals are dissolved, remove the mass from the stove. Add plum and pieces of physalis to the pan, wait 3 hours. After a time, bring the jam to a boil, simmer at low power for 15 minutes.
  4. Remove the foam, stir the contents with a wooden spoon. Fruits should acquire translucency and become practically invisible. After reaching this state, pour a lemon, simmer a treat for 8 minutes.
  5. Take care of sterilizing containers in advance. The container must be washed with soda, sterilized and dried. The lids boil for 5 minutes. Spend filling and closing treats.

If you want to keep the original form of physalis during the heat treatment, first scald the fruits with boiling water and make punctures with a needle.
