How to cook tiramisu at home

The original Italian tiramisu cake won the hearts of millions. In a short time, the recipe flew all over the planet and firmly settled in the restaurants of the cities. Italian chefs unanimously reiterate that the true value of a dish can be known only in their country, to some extent they are right. However, this does not mean that it is impossible to repeat the technology, close to the original recipe. There is a certain composition of the cake, which has remained unchanged for many years.

How to make tiramisu

What does tiramisu consist of?

  1. Black coffee. The variety of custard drink used in cakes has not yet been established. The Italians do not reveal their secret, they collect coffee of all kinds and different degrees of roasting. The main thing is that it is freshly brewed, strong, without the addition of impurities.
  2. Savoyardi. To make tiramisu, you need to purchase special cookies, but it is not so easy to get it, especially in small towns. Most experienced housewives prepare saccoyards on their own to save money and time spent searching.
  3. Marsala. Wine prepared in sunny Italy on the shores of Sicily. The drink belongs to expensive components and is not sold in all cities. For this reason, it can be replaced with any other alcohol suitable for baking.
  4. Mascarpone. The product belongs to the soft type cheeses, in consistency it resembles a dense custard. Cheese is made from the milk of elite cows that live on the Apennine Peninsula. By and large, the ingredient can be replaced with a similar air mass.

In addition to the above components, chicken eggs, granulated sugar, cocoa powder are added to tiramisu. The ingredients are calculated based on the total mass of the dessert and the specific recipe.

Classic Tiramisu Recipe

  • Savoyardi cookies - 17 pcs.
  • Mascarpone cheese - 240 gr.
  • chicken egg - 2 pcs.
  • granulated sugar - 50 gr.
  • black coffee (freshly brewed) - 200 ml.
  • confectionery liquor (strong) - 20 gr.
  • cocoa powder for decoration (can be replaced with grated chocolate)

  1. Divide the granulated sugar into 2 equal parts (25 g each), separate the chicken protein from the yolk. Place the squirrels in the refrigerator for half an hour, at this time rub the yolks with half the sugar. When the protein cools, beat it with granulated sugar.
  2. Mix both compounds into one mass, beat with a mixer for 10 minutes (whisk 2 times longer). At the end of the period, add the cheese, rub it with a fork, and then continue to whisk with a mixer. The mixture should be thick and uniform.
  3. Cool the brewed coffee to room temperature, pour cognac or confectionery liquor on it.
  4. Prepare the container in which the cake will be prepared, dip the cookies in the whole coffee, then line the bottom of the bowl with it. Since Sakvoyardi dissolves in a short time, carry out the procedure quickly so that the coffee does not turn into jelly.
  5. After you lay out the first row of cookies, pour it on top with ready-made whipped cream. With the next layer, line the cookies again, pour over the cream mass on top. As a result, you should get 4 layers.
  6. Sprinkle the top of the cake with grated dark chocolate or spray the cocoa powder. Put in the refrigerator for 5 hours, so that the mass is completely saturated.

Serve tiramisu according to the original recipe for coffee, tea or alcoholic beverages (wine, cognac, whiskey, martini).

How to cook tiramisu sparingly

In most cases, many girls get scared when they calculate the approximate cost of the ingredients according to the original recipe, and this is not surprising. The composition comes out so expensive that the desire to experiment disappears in an instant. It's easier to visit your favorite restaurant and order a piece of tiramisu from them. To avoid unnecessary expenses and start cooking, it is enough to replace some of the ingredients with the same in taste, but more affordable in terms of price.

How to cook tiramisu sparingly

Replace the Mascarpone cheese
If you do not live in a large city, it is unlikely that you can get such a rare kind of cheese. Moreover, this is not necessary.

  1. Mascarpone can be replaced with natural fat sour cream. Before adding to the rest of the ingredients, it must be beaten with a mixer to a dense consistency (the duration of the procedure varies from 10 to 20 minutes).
  2. In the department of baby food you will find cottage cheese with a maximum threshold of fat content, it is also suitable for tiramisu. The main feature of this move is that you need to add less granulated sugar so that the cake does not turn out sugary.
  3. The next option is the simplest: get a pack of fat cottage cheese (preferably homemade), rub it with powdered sugar with a fork. After that, add a little sour cream and send the composition to the blender for 3 minutes.

It is important to understand that it is difficult to distinguish tiramisu with real mascarpone from its similar options. If you do not have the experience of a taster, there is nothing to worry about. Many seedy restaurants serve Italian cakes in the homemade version of cheese, making a wrap as for the original components.

Replace Savoyardi cookies
In most cases, to make tiramisu, you need to buy special cookies, which, like everything else, are difficult to get. Home-made baking will help to solve the problem, it is in no way inferior to the finished product. Savoyardi is made from biscuit dough, so picking up an analogy will not be difficult. Choose your favorite recipe and start the procedure.

  3. Once the sugar has melted, add the protein mixture to it and beat well again. Sift the flour, start pouring it slowly.
  4. Knead the lumps with a fork. When the mass becomes wet, move it to a blender or bring to uniformity with a mixer.
  5. Preheat the oven to 190 degrees, place parchment paper or baking foil on a baking sheet. Put the dough with chopsticks, wait until the cookies are ready. Typically, the baking time is about a quarter of an hour.

Important! It is not necessary to spread the dough with chopsticks, you can pour it on a baking sheet, and after cooking cut it with a knife into pieces of the same size. In this case, it is necessary to put a ready-made biscuit in water or place a wet towel under a baking sheet so that the cookies easily go away.

  2. It is not necessary to whip the cream to a thick consistency. If you didn’t succeed, do not be discouraged. Transfer the liquid cream with the cookies placed in a bowl and eat it with a dessert fork / spoon.
  3. After the cookie is soaked, tiramisu needs to be cut into pieces. In order not to damage the structure and maintain the aesthetic appearance of the dish, moisten the knife before each new stroke.

There is one classic recipe for tiramissu, which is considered fundamental. It includes only original and expensive ingredients that are not sold in every city. Replace components with similar ones, cook them yourself, observe proportions.
